How would you structure a year long sabbatical to recover from burnout while also attempting to build your own business?

I was initially thinking of doing the SE Asia circuit starting in late Nov/early Dec with Chiang Mai to start then Bangkok once the air in CM gets worse.

Then when Bali weather improves, go there for a month or two, and then either go back to Thailand or do Vietnam for a while.

Now I'm wondering if I should just start with LATAM for a few months before making the leap to Asia. I'd also like to get back into road cycling so places with group rides would be ideal.

I've lived in Medellín before but grew bored of it after 3 months there. I was considering a return to CDMX, Buenos Aires, or maybe even Sao Paulo (though I've only been to Rio in the past).
